Slippery jacks — very tasty mushrooms. They very much like to grow in coniferous forests, preferring solar, places are well heated-up. Quite often they can be met even on forest footpaths, in particular where sandy soil. It is possible to train from them practically all: fry, cook mushroom soup... They can be prepared for the winter if to dry up, salt or pickle. Slippery jacks are tasty in itself, at them both the hat, and a leg are edible. In a word, it is universal mushrooms. But they have some features which need to be taken into account.

Instruction

1. When collecting slippery jacks it is necessary to consider that these mushrooms very much often happen worm-eaten. Try not to take the worm-eaten and outgrown mushrooms. Collect slippery jacks of the average size, strong and clean.

2. Clean mushrooms. When processing slippery jacks it is of particular importance as the hat is covered with a sticky film to which dry leaves and other dirt stick. Hats of young slippery jacks are completely covered with a film from below. The sticky film needs to be deleted completely. If to weld mushrooms together with a film, they will become bitter, and the film will harden. Besides, the stuck dirt cannot be purified. The knife when cleaning needs to be washed out periodically as the film sticks to it very well.

3. Wash mushrooms. For this purpose put them in a colander and wash out under flow water, periodically mixing. At the same time the remains of garbage and slime are removed.

4. Crush mushrooms. The more small there will be pieces, the better they will be acquired by an organism. Cut slippery jacks thin plates or cubes on a cutting board a sharp knife.

5. Fill in mushrooms with water in a pan, put on fire and bring to boiling. If you have in a pan some slippery jacks, it is enough to boil of them in boiling water within 15 minutes. In the course of cooking, foam which needs to be removed a spoon or a skimmer is formed. Upon termination of cooking merge liquid, and once again wash out mushrooms in a colander under a stream of cold water.

6. Warm a frying pan. Pour some vegetable oil there. Cut a piece of chalk onions and fry it in oil till golden color. Put slippery jacks on a frying pan and fry them until until they begin to be condensed considerably (at the same time from them excess moisture is removed). At this moment the slippery jacks should be salted and to mix once again. Slippery jacks can be given on a table with sour cream, fried potatoes (in an European way) or with fried meat (in Siberian).
