For preparation of a hominy it is worth taking flour (corn) of a fine crushing. Before it it is necessary to dry it a little in an oven. Then corn flour is sifted through a sieve.

For cooking of a hominy use a cauldron - a pig-iron copper with a thick bottom and walls. In it heat slightly added some salt water. After it begins to boil, it is possible to fill up corn flour. Standard ratio of ingredients: on 3 glasses of water take 1 glass of flour. To avoid balling, in the center of a cauldron put a wooden rolling pin (scapula, the mixer). It is necessary to cook a hominy within 30 minutes on slow fire. At the same time it it is regularly necessary to stir slowly, pressing a rolling pin to cauldron walls. Then fire is reduced by a minimum and left to be cooked longer (10-15 minutes). To learn readiness of a dish, the rolling pin is lowered vertically and begin to rotate quickly it palms. The hominy is ready if porridge doesn't stick to a wooden rolling pin. After that, having moistened a spoon in water, it is separated from cauldron walls. Having stirred up capacity several times, porridge is overturned on a clean cloth or a cutting board. Correctly prepared hominy doesn't collapse on a dish and keeps a cauldron outline in accuracy. Before giving of a dish to a table the hominy is knifed on pieces wooden or a thick thread. It is given with garlic, eggs, milk or brynza. Quite often from a hominy train Urse (balls). On 2 l of water 400 g of corn flour, 1 glass of grated brynza, 1 teaspoon of salt are required. The middle of each ball is filled with brynza. After that they are worn out in sol. Before giving on a table the dish is decorated with greens and flavored with milk.
