Buckwheat pork soup on a stone

Soups are loved by many people, and especially welded on meat soup. Buckwheat soup has very saturated and pleasant aroma, and excellently satisfies hunger. For preparation of broth it is possible to use both pork, and all-beef.

Ingredients:

  • 5 kg of pork on a stone;
  • 5 potato tubers;
  • on 1 carrot and a bulb of the average sizes;
  • 1 glass of buckwheat;
  • lavrushka and allspice peas;
  • sunflower oil;
  • sour cream;
  • fresh greens;
  • pepper and salt.

Preparation:

  • For a start prepare meat. It it is necessary to wash out and cut off films carefully. Then it is placed in deep capacity and there pour water. It has to be soaked not less than 60 minutes. Then pork is got from water, rinsed and placed in other saucepan for cooking.
  • Meat should be filled in with cold water, it has to be completely covered with it. Then the pan is covered and put on a plate. When water begins to boil, it is necessary to lower fire a little. Remove all foam. After it is completely removed, to reduce fire to a minimum and to cook broth further.
  • Potato tubers should be washed out properly. Then from them delete a peel and by means of a sharp knife cut on cubes not of the really big size.
  • Then prepare carrot and onions. For this purpose they at first should be cleaned, and then to wash in a clear water. After that carrots are crushed by means of a large grater, and the bulb is cut in small cubes.
  • Put a frying pan on a plate and pour in it some sunflower oil. When it is warmed, pour onions. 2–3 minutes later send also carrot there. Vegetables fry on average fire and systematically them stir slowly. You watch that they didn't fry very strongly, and only became soft and got a golden shade.
  • After broth boils 60–80 minutes, in it it is necessary to pour out the prepared potatoes. There send also buckwheat which should be touched in advance (if necessary) and to wash out properly. Put in spice broth, namely, a lavrushka, bell pepper. Also soup should be peppered and salted.
  • Properly mix everything and continue to cook soup, grain and potato won't be ready yet. Then it is necessary to remove a pan from fire and, without removing a cover, to give it will infuse during a third of hour.
  • Before spilling soup on plates, it is necessary to pull out meat, to crush it and again to pour out in a pan. It is necessary to add a little sour cream to each plate and swept chopped greens.
