Meat of a turkey is considered very useful product, it is easily acquired, is saturated enzymes, minerals and iron. And from different parts of a turkey it is possible to prepare a set of dishes for every taste.

Soup from a shin of a turkey

It is required:

- 1 shin of a turkey;

- 1 small bulb;

- 2 carrots;

- 6 potatoes;

- 2 tomatoes;

- 1 paprika;

- 2 stalks of a celery;

- 2 tablespoons of vegetable oil;

- 150 g of a bean;

- 1 bunch of parsley;

- salt, pepper to taste.

Turkey fry from two parties in a dry frying pan. Then put a shin in a pan and fill in with cold water. You cook on slow fire within an hour, scumming. As soon as meat is ready, shift to a plate and cool.

Small cut onions, carrots - straws, potatoes, tomatoes, pepper and a celery - cubes.

Warm oil in a frying pan, fry onions and carrots on moderate fire to a soft consistency. Then shift in a pan with broth. Add potatoes cut by segments and bring to the boil.

Then cut haricot on pieces of 3-4 cm. Remove meat from a bone, cut on portion pieces. Shift in a pan together with all vegetables. For taste season with salt and pepper and you cook soup on average fire, about 10 minutes. Pour on plates and strew with small cut greens.

Rolls from a turkey with dried apricots and apples

- 500 g of fillet of a turkey;

- 1 apple;

- 40 g of dried apricots;

- 2 tablespoons of olive oil;

- 3 cherry tomatoes;

- 70 g of a hard cheese;

- salt, spices.

For marinade:

- 1 tablespoon of olive oil;

- 2 tablespoons of vinegar;

- 1 h mustard spoon.

In a bowl mix all products for marinade. Then beat off fillet, salt, add some spice and put in marinade for 15 minutes.

Peel apples, remove a core and cut with thin slices. Wash out dried apricots and wet in hot water for 5-10 minutes. Then small cut it and mix with apples.

Put mix of apples and dried apricots in the middle of fillet. Then inwrap roll, put a seam down.

Well warm a frying pan with olive oil. Fry rolls on both sides till golden color. Put products in a form for roasting. From above put cherry tomatoes and polished cheese. Add a little water and bake rolls within 15 minutes. 

Cut finished products a la carte and give to a table.

Kebab from forcemeat of a turkey

- 450 g of fillet of a turkey or ready forcemeat;

- 1 bulb;

- 1 tablespoon of vegetable oil;

- 1 tablespoon of flour;

- 1 egg white;

- 1 tablespoon of sugar;

- spices, salt, pepper to taste.

For sauce:

- 2 garlic gloves;

- 1 h spoon of lemon juice;

- 2 tablespoons of mayonnaise;

- 1 tablespoon of yogurt;

- salt, pepper.

Turn via the meat grinder of fillet of a turkey with addition of onions. Fill with salt and spices, pour vegetable oil and fill torments. Stir weight.

Nimbus beat egg white together with sugar before formation of dense foam. Carefully add to forcemeat.

Moisten hands in cold water, form kebabs. For convenience, it is possible to put on a semi-finished product wooden skewers.

For preparation of sauce grate garlic on a small grater, add lemon juice and leave for 10 minutes. Put mayonnaise, yogurt, salt and pepper. Well stir. Fry kebabs on a brazier within 15 minutes before formation of golden color. Serve the dish with sauce.
