It is required to you

  • apples of 1 kg;
    • granulated sugar of 1.2 kg.

Instruction

1. Choose apples for jam. Better than others firm, slightly immature fruits will approach. Remove the damaged, crumpled fruit.

2. Wash up apples in cold water a soft brush. Peel fruits. Remove a core. Cut apples on segments about 1-1.5 cm thick.

3. With a wide bottom pour water into a pan. Bring it to the boil. Put apples in a colander and blanch them within 3-5 minutes.

4. On the water which remained after scalding prepare syrup. Dissolve 600 g of granulated sugar in 1.5 glasses of liquid. Bring to the boil on average fire. Ship in syrup of segment of apples. Sustain within 3-5 hours.

5. Put ware with jam on slow fire. You boil within 5-7 minutes. Leave apples in syrup for 6-8 hours.

6. Filter jam through a colander. Add the remained sugar (600 g) to syrup. Bring to the boil. Again put in it segments of apples. You cook within 5-7 minutes at weak boiling. Remove from fire. Leave apples in syrup for 8-10 hours.

7. Put ware with jam on weak fire. You cook until ready. Apple jam is considered ready when segments evenly became impregnated, became transparent, and drops of syrup don't spread on a saucer surface.

8. Let's jam cool down. Spread out on banks. In a form of a neck of cans cut out circles from parchment paper. Moisten them with vodka, put over jam. Cover with polyethylene covers.
