Instruction

1. Decide on a grade of peas which you want to prepare. Green peas of brain grades not really large, an oval form, to taste sweet and perfectly will be suitable for a garnish, paste, puree. Peas of smooth-seeded grades large, rounded shape. It is better to use it for preparation of salads.

2. Give preference to freshly frozen green peas out of a season instead of the preserved or brought fresh. At observance of all rules of freezing in grains the majority of nutritive matters remains. Before purchase of the frozen green peas carefully check a condition of packing. In a package there shouldn't be pieces of ice and snow, the frozen together grains, otherwise it demonstrates inadequate storage.

3. Select for cooking the whole pods of bright green color which are densely filled with grains, but at the same time soft to the touch. Wash up fresh green peas in cool water, separate grains from pods.

4. Boil a large amount of water in a pan. Place seeds of green peas in the boiling water in the small portions. Boiling shouldn't stop. Then cover a pan and leave. Fire expose maximum. Lower freshly frozen green peas in strongly boiling water without preliminary defrosting, so it will turn out more tasty, and in it the bigger amount of vitamins will remain. Add a little sugar when cooking green peas. It will help to keep bright natural color of beans. For taste and aroma it is also possible to put 1-2 branches of fresh mint in broth.

5. You cook green peas from 5 to 20 minutes, depending on a maturity of fruits and a grade. Grains have to remain whole, but at the same time soft, with a gentle skin. Cast away ready green peas on a colander and let's water flow down. Then salt, pepper.

6. Combine boiled green peas with vegetables with a sweet taste, for example, with carrots, onions, beet, potatoes. Also boiled peas can be added to soups, salads. If you want to prepare from boiled green peas of puree, then wipe or knead grains right after boiling still hot that mass turned out homogeneous, without lumps.

7. Dip peas grains into ice water to stop its cooking, and then place in the fridge if you don't want to use boiled peas at once. Then warm it in mix of a desi and water. On 1 part of oil take 2 parts of water.
