  • For preparation of jam from water-melon pulp:
  • - 500 g of pulp of watermelon;
  • - 800 g of sugar;
  • - glass of water;
  • - lemon zest.
  • For preparation of jam from water-melon crusts:
  • - 1 kg of crusts;
  • - 1 kg of sugar;
  • - 3 glasses of water;
  • - 1 teaspoon of soda.

Instruction

1. For preparation of water-melon jam from pulp remove from crust berry, clean seeds. Cut on small segments and place them in the enameled bowl. Fill in with water. Put to cook on small fire. Continue to cook before softening of water-melon pieces. Then merge surplus of water. After that take a lemon. Scald it boiled water. Grate a lemon dried peel, and squeeze out juice of pulp. Take 0.5 kg of granulated sugar, fill in it with a glass of water and lemon juice. Bring this syrup to the boil. Fill in with it water-melon pieces and you cook everything together on small fire. Constantly mix. After jam zagusnt, remove from fire and pour in banks. Consider that the jars need to be sterilized in advance.

2. To cook water-melon jam of pink and transparent color, cut in small cubes a white-red part of crusts. In a glass with hot water dissolve a soda teaspoon. Put water-melon pieces in a pan, fill in them with five glasses of water and add a glass of water with soda. Carefully mix everything, and then put for four hours to the dark place. After that drain water and wash out water-melon pieces.

3. To prepare sweet syrup for this jam, in the big enameled ware fill a half of kilogram of sugar. Add three glasses of water, mix. Put this mix on small fire, boil. Put water-melon pieces in a bowl, continue to cook about 20 minutes. Put jam for 8-12 hours to the dark place. After that add 0.5 more kg of sugar. Mix and bring to the boil. If desired you can add a thin skin of a lemon or a vanilla bean to soup. Upon termination of cooking take out vanilla. Let's jam cool down. Spread out it on previously prepared banks. Remove them on storage to the dark cool place.
