Take for drying well dead-ripe healthy apricots with dense pulp and well separating stone. Carefully wash up and dry up fruits that excess moisture left. Halve them and remove stones.

In house conditions the apricots can be dried in an oven or in dry weather on air and also combining both methods, but anyway you will need sheets for spreading as which it is possible to use baking sheets, trays or grids on wooden frames.

For drying in an oven lay baking sheets paper for pastries, lay apricots cuts up, put in an oven and you dry at a temperature 50-60os within 1 hour, periodically stirring slowly. Then open an oven and let's fruits cool down then repeat the procedure until apricots don't cease to emit juice when tightening (5-6 times). It is possible to arrive and in a different way: place the prepared halves of apricots in a colander or a sieve and sustain within 5-10 minutes over the boiling water to keep their natural color. Dry up fruits from excess moisture on pure cotton fabric, and then spread out to the baking tray laid by paper and put in the oven warmed up to 65 wasps for 8-10 hours. Cool dried apricots, pour into a wooden box with densely closed cover, leave for 3 weeks, and then you store in dry, well aerated place. Such way will help to keep all useful properties of apricots. For drying on air spread out the prepared fruits to sheets, sustain within 3-4 hours in a shadow, then take out in the sun, and for the night remove a baking plate a roof or a canopy. Further apricots can be dried in a shadow: in the private house – on the attic, a verandah or in a gazebo, in the city apartment – on the balcony or a loggia. Excessive stay in the sun can give to dried apricots the ugly baked look. The combined method of drying of apricots is as follows: at first fruits expose 3-4 hours to sun, then within 1 hour in the oven heated to 50-60os then send to be finally dried in a shadow. Keep in mind that the dried apricots made at home will externally differ from store as the last for maintaining presentation on production is fumigated with sulphurous anhydride.
