The softness of fried beef in many respects depends on quality of meat, but, nevertheless, there are many ways how to make meat more gentle and tasty. The neck and cutting most of all are suitable for frying.

    • kefir
    • pomegranate juice.

Instruction

1. Carefully peel meat from films and tendons, wash it and cut on steaks across fibers. Grease them with mustard, salt, pepper, add small cut onions. It will give juice, and meat will be juicy and soft. Put to be pickled in the fridge for two hours. Then fry steaks within 3-4 minutes from each party till golden color, and later put a frying pan in the oven warmed up to 220 degrees for 10-15 minutes, but not longer, otherwise meat will become tough.

2. Meat will be tasty, soft and juicy if to wet it for a couple of hours in kefir or other fermented milk product. It is also very good to add a table wine at a roasting stage. Alcohol will soften fibers, and meat will become soft quicker.

3. It is possible to pickle the cut beef in spices and a soy-bean sauce for half an hour-hour, then to fry to a golden crust, and after to cover and bring to readiness on slow fire.

4. Beat off properly pieces of cutting and put them to be pickled in pomegranate juice for 20 minutes. Later make punctures a knife and enclose in them small cut fat and garlic. Put meat on a frying pan and fry in an oven. Instead of pomegranate juice it is possible to take lemon juice or a table vinegar.

5. Take a beef neck, cut and properly beat off, and then dip into batter and fry, very gentle chop turns out.

6. The beef baked in a foil usually always turns out juicy and gentle. Salt steaks and well beat off. Put a chop on the heated frying pan and fry until ready. Clean several potatoes and cut them circles. Fry potato from two parties. Lay out a beef chop on a leaf of a foil, and from above place potatoes. Clean mushrooms and cut them small pieces. Fry mushrooms, having added cream. Put ready mushrooms over potatoes. Salt everything and pepper. Then press densely edges of a foil. Put on a baking tray and prepare at a temperature of 200 degrees.
