On a hat there shouldn't be yellow spots. Break off a small piece from a hat. At a young oyster mushroom pulp juicy, white, and at old — fibrous. The mushroom shouldn't crumble.

2. Wash out oyster mushrooms under flowing cold water, it isn't necessary to clean these mushrooms. Dry on a paper towel and cut medium-sized straws about 1 cm thick. It isn't obligatory to cook oyster mushrooms before roasting. Clean onions and chop small cubes or small half rings.
