  • berries of a guelder-rose red - 1 kg;
  • granulated sugar - 850 g;
  • water - 200 ml.

For jam it is better to use fresh berries. Before preparation of delicacy of berry of a guelder-rose clean from leaves and branches, wash a baking plate with cold flowing water and dry.

It is better to cook jam in the enameled ware to avoid burning. Berries place in capacity and fill in 200 ml of water, put on slow fire. After water begins to boil and berry will start up juice, fire is switched off.

This recipe isn't so distributed as classical, however, fans of a guelder-rose will value it according to the merits. The following ingredients are necessary for preparation of such jam:

  • berries of a guelder-rose red (fresh) - 1 kg;
  • granulated sugar - 1.5 kg;
  • 2 glasses of water;
  • vanilla (on a knife tip);
  • lemon - 1 piece.

Berries touch previously, clean and wash a baking plate with flowing water. The guelder-rose is processed salt solution from calculation of 20 grams of salt on 1 liter of water. In such structure the guelder-rose is kept by 5 minutes. Such cunning will help to get rid of a bitter taste of berry.

The sugar syrup is cooked in the same way, as in the classical recipe. As soon as mix began to start to boil place berries in it and continue to cook on slow fire. In half an hour, jam is switched off and given отдохнутиь within 7 hours.

  • granulated sugar - 3.5 kg;
  • water - 350 ml.

As well as in the previous recipes it is necessary to wash out and peel guelder-rose berries. Dry berries pound to a condition of porridge.

Apples are washed, peeled also stones. After that small cut and put in the enameled ware. Fill in 100 ml of water and add 1 kg of granulated sugar. Boil mix before its jelling.

Add mix of a guelder-rose and the remained water to apple puree. Cook jam within 30 minutes, after that switch off. Ready delicacy is displayed on banks and corked with tin covers.

Kalinovy jam with rowan fruits

It is impossible to call the recipe of a guelder-rose with a rowan ordinary. The few culinary specialists know about it and seldom prepare. However, it doesn't deprive kalinovy jam with a rowan of useful properties which increase almost twice due to addition of a rowan.

The following ingredients are necessary for preparation of jam:

  • guelder-rose berries - 1.5 kg;
  • rowan berries - 1.5 kg;
  • granulated sugar - 2.5 kg;
  • water - 250 ml.

As always, preparation of jam begins with processing of berries. The guelder-rose and a rowan are carefully cleaned from leaves and fruit stems, washed out in cold water and dried on a towel.

Dry-through berries place in the enameled capacity and fill up with sugar. The received mix is carefully mixed. Boil mix of 6-8 minutes before emergence of the first juice, cool. Leave berries at several o'clock. repeat the procedure 3 times. During the last cooking try to obtain dense consistence. Shift in sterile banks and roll up.
