  • - water – 1.5 liters
  • - apples – 600–700 grams
  • - sugar – approximately a half-glass

Instruction

1. Apples need to be washed. For compote it is better to take the perfect not beaten fruits. The washed-up apples are cut on 6–8 segments, and from them the core is removed. In order that apples didn't darken and didn't get an ugly rusty shade, it is necessary to take a bowl with water and the citric acid divorced in it. In this bowl each cleaned segment is put.

2. Apples keep within a pan, are filled in with cold water, and the pan is put on average fire. If compote cooks from green apples, then the taste at it and so will turn out with small sourness. And at preparation of compote from apples of red color which in itself sweet, it is desirable to add a little citric acid to it. For the best extraction from apples it is necessary to add to compote of aromatic and flavoring substances at the beginning of cooking a part of sugar.

3. Compote is brought to the boil, the sugar remains are added, everything mixes up, and compote cooks several minutes. Duration of cooking depends on rigidity of apples. If they strongly ripe and soft, it is enough to cook 2–3 minutes. Green and unripe apples cook longer, it is necessary to be guided on their appearance.

4. It isn't necessary to boil compote a long time – from apples all vitamins which are contained in them will be gone. Then the pan is removed from fire then it needs to be closed a cover and to allow compote to infuse about 20 minutes. Then it is necessary to remove compote in the fridge, otherwise in the fresh air it will turn sour quicker.

5. At the second option of preparation of compote from apples at first water in a pan is brought to the boil, and only then in it the cut apples and sugar pour out. Compote is again brought to the boil, is removed from fire and is left to infuse under the closed cover.

6. The made apples compote should be drunk cooled, so it satisfies thirst better. And some nutritionists recommend to replace in summertime tea with compote.
