How to make khinkali in the double boiler

Khinkali - the dish which came from the Caucasus. Many confuse it with a dagenstansky hinkal, you shouldn't do it as it is absolutely two different things. The reminding dumplings, khinkali meet also in kitchens of Georgians, people of Dagestan, Azerbaijanians, Armenians, Chechens and Ossetians. And to prepare this dish quickly and conveniently the double boiler will help.

It is required to you

  • double boiler;
    • for the test: 1 kg of flour
    • 2 eggs
    • 1 tablespoons of salt
    • 1 glass of milk
    • 1 tablespoons of vegetable oil;
    • for forcemeat: 800 g of beef
    • 600 g of mutton
    • 2 heads of onions
    • 5 garlic gloves
    • 1 tsps of a black pepper
    • 1 tsps of red burning pepper
    • 2 tsps of cumin
    • 2 tsps of a coriander
    • 2 tsps of salt
    • 2 branches of mint
    • parsley bunch
    • cilantro bunch
    • 200 g of meat soup.

Instruction

1. Take capacity for doughing. Fill in it 1 kg of flour, in the center make deepening and break in it two eggs. Add 1 tablespoon of salt there. Pour in a glass of milk, a tablespoon of vegetable oil in mix. Knead dough before formation of homogeneous mass.

2. Powder a land surface of a kitchen table. Lay out the turned-out dough and continue to knead carefully until it incorporates all flour which remained in shape. To check, dough is ready or not – roll from it a sphere and if it doesn't spread on a table, so everything is all right. Further cover it with a form in which mixed, and leave so for 40 minutes.

3. Make forcemeat for khinkali. Take 800 g of beef more fatly and 600 g of mutton. Correctly made forcemeat the most important for this dish. Best of all cut it into small pieces on 0.7 cm in length and width.

4. Small chop two bulbs and together with meat put in a pan. Mix. There put on one teaspoon of a black pepper, burning paprika, cumin and two teaspoons – a coriander and salt. That process of pickling began, mix forcemeat. Sharp small knife garlic and mix with meat.

5. Make greens for forcemeat. Wash two branches of mint, on a bunch of parsley and cilantro. Everything small cut and mix with forcemeat hands.

6. Add 200 g of meat soup to forcemeat and leave for 20 minutes.

7. From the test roll a plait and cut on equal pieces. Roll them with a rolling pin, but it isn't strongly thin in order that the forcemeat filled with broth didn't follow.

8. On the received circles put 1 tablespoon of forcemeat, directly on the middle. Carefully lifting edges, put them accurate folds and connect above in the center so that the small knot turned out.

9. Prepare the double boiler. If in your wonderful car there is no covering preventing sticking, then get lattices and oil them vegetable. On a bottom plate lay out khinkali, fill in the necessary amount of water in the corresponding tank, turn on the double boiler in network and expose the timer approximately for 30-35 minutes.

10. After time expired, lay out khinkali on a big dish and give on a table.
