Such dish as lobio is very popular in Georgia. Lobio designates both the name of haricot, and the dishes prepared on its basis. In preparation of lobio it is possible to use any (white or color) and also a bean.
Lobio from a bean
It is required to you:
- a bean - 500 g;
- onions - 2 pieces;
- tomatoes - 3 pieces (or tomato paste - 2 tablespoons);
- garlic - 3 cloves;
- sunflower oil - for frying;
- hot red pepper - to taste;
- fresh greens (basil, cilantro, fennel or parsley).
Wash a bean, then cut with small pieces and boil.
Meanwhile, while haricot is cooked, it is necessary to make sauce: wash tomatoes, then blanch and small chop a knife. Clean onions and very small cut, fry in a small amount of sunflower oil, then add to it tomatoes or tomato paste and you extinguish frying pan contents within 5-7 minutes. Also don't forget to add any spices to your taste.
Connect contents of a frying pan to a bean, then cool and add the hot pepper and garlic crushed by means of the garlic press. Wash any fresh greens (parsley, cilantro, a basil or others) and small chop. Strew with these greens lobio.
The lobio made from a bean perfectly approaches meat dishes.
Also in this recipe it is possible to use tinned haricot.
Useful properties of a bean are known: it is very noncaloric product which contains a large amount of vitamins of group A, B, C and also folic acid and mineral substances (iron, zinc, potassium, calcium and others) and also protein, carbohydrates, sugar and fats.
The bean promotes work of an alimentary system, helps with fight against skin diseases, at rheumatism, facilitates bronchitis and helps at intestines diseases. Besides, the iron which is contained in haricot helps at diseases of blood and promotes formation of erythrocytes.
Lobio from red beans
It is required to you:
- red beans - 150 g;
- garlic - 5 cloves;
- walnuts - 100 g;
- vegetable oil - for frying;
- red hot pepper, coriander seeds;
- fresh greens (basil, parsley, fennel, cilantro).
Haricot is cooked by a traditional image: it is the best of all to fill in it with water since evening. If you have not a lot of time, then it is possible to accelerate this process and to fill in haricot with boiled water several times. In this case haricot has to stand 3-4 hours.
Wash out the prepared haricot, once again fill in it with water and bring to the boil on average fire. You cook 10 more minutes, and then drain water, wash out, fill in once again with fresh water and you cook until ready.
Further it is possible to arrive in two ways: ready haricot can be pounded and also to leave it intact.
Crush kernels of walnut or any other nuts by means of the blender and add to red beans. Cool haricot and nuts a little, and then it is possible to add olive oil, the crushed garlic and greens and also any seasonings to your taste.
It is good to serve such lobio with meat dishes, it is also perfectly combined with table wines and fresh juices.
