How to make rowan wine

Mountain ash wine is usually done sweet, sweet to muffle unpleasant slightly bitter taste which remains in berries even after processing cold. A wild-growing rowan wine has beautiful light yellow or amber color, is long maintained and stored.

It is required to you

  • - 10 kg of berries of a rowan;
  • - 10 l of water;
  • - 3.4 kg of sugar;
  • - 20 g of yeast.

Instruction

1. Prepare 10 kg of mountain ash berries: collect a rowan after the first frosts, usually in the first of November. It is also possible to use the berries picked to frosts. To remove from them bitterness, put berries in the freezer for 8 – 12 hours, or fill in with the boiling brine (10% of salt) for five minutes, then carefully wash with cold water.

2. Crush a rowan in the blender, put in volume ware, press, add 10 l of water, 2 kg of sugar, 20 g of the divorced yeast and leave to wander. In five-seven days separate juice by means of the juice extractor or having passed through a sieve. Put 1.4 kg of sugar in juice, pour on bottles, you store in a cold spot (you monitor formation of a deposit in the period of endurance, merge wine, without allowing decomposition of a deposit).

3. Add to a mash apple juice from winter grades of apples: fill in the crushed rowan with eight liters of water and two liters of apple juice, then follow the recipe (addition of apple juice improves gustatory qualities of wine).

4. Make mountain ash wine in a different way. Prepare fruits of a rowan the same as it is described above. Miss the father-in-law of kilograms of berries via the juice extractor, fill in a press with five liters of warm water (23 – 25 wasps), mix, add twenty grams of yeast, leave to be fermented for two three days at a temperature of 25 wasps, put juice in the fridge.

5. Filter the fermented liquid, mix with a fresh juice, add one kilogram of sugar, leave to be fermented for two three days, then filter a mash once again and add one more kilogram of sugar. Cover mouths of vessels with a gauze, don't allow hit of dust and garbage. Merge wine, pour on bottles, place in storage in a cold spot.

6. Merge wine once again in several months when the deposit appears. Mature mountain ash wine within two years.
