1. Before cooking separate sea-buckthorn fruits from branches, trying not to damage them. Touch them, destem, wash up in cold water and dry.

2. Prepare syrup: on 1 kg of berries 1.2 liters of water and 1.5 kg of sugar are necessary. Heat syrup so that sugar was dissolved, and fill in with it the prepared fruits. Leave syrup with berries for 3-4 hours for swelling, then separate by means of a sieve. Bring syrup to the boil, then cool and connect to fruits, you cook on small fire until ready. When berries cease to emerge, jam became dense – cool it and package it on banks.

3. That sea-buckthorn jam was better stored, didn't become candied and didn't grow mouldy, pasteurize banks. For this purpose pack jam hot in the sterilized banks and lower them in the boiling water. Leave water to boil, you keep one-liter jars on a plate of 20 minutes, half liter – 15 minutes. Calcinate covers on a plate and at once close them banks.

4. If berries became overripe or burst at removal from branches, cook sea-buckthorn jam. Add sugar to the washed-up berries (on kilogram of fruits of 1.2 kg of sugar), warm up on small fire, so far sugar not to be dissolved. Then strengthen fire and you cook jam until it thickens. It is also best of all to sterilize banks with jam that it was better stored.

Then add to puree sugar (on 1 kg of puree of 0.8 kg of sugar), warm up on small fire and lay in the sterilized banks. 6. It is possible to cook sea-buckthorn jam without stones and in a different way. By means of the juice extractor or the meat grinder wring out juice and add sugar (on juice liter 1.2-1.5 kilograms of sugar). Put juice on fire and bring to the boil, you cook until thick. Package jam on banks and sterilize.

7. Kind of you cooked sea-buckthorn jam, in the course of storage it is inevitably stratified. If not to mix it, on a surface it is possible to collect the pure sea-buckthorn oil having many useful properties.
