How to make tasty dandelions jam

Dandelions are not just beautiful spring florets, but a plant, extremely useful to health. With an ulterior motive it is widely used in traditional medicine. But there is more to come. What is only not prepared from dandelions: vitamin salads, wine, soups, balms, fruit liqueurs, tinctures, rolls and even coffee. But dandelions jam remains the most popular dish.

It is necessary to collect a dandelion in dry weather when florets well reveal. Far away from the noisy megalopolis, the plants and not near roads.

There are different options of processing of flowers. They can be washed out and soaked to get rid of bitterness, and it is possible not to wash and keep useful pollen. But anyway dandelions have to be surely exempted from a green receptacle. It is possible to make it ordinary scissors, having cut off a yellow hat.

1.     Dandelions jam usual

It is required: 900 ml of sugar, 900 ml of water, well and directly, dandelions in number of 350 pieces.

Florets need to be filled in with water and to leave for 5-6 hours alone. Then we drain water, we get rid of a green part of a flower, again we add water and we send to fire for 10-15 minutes. Further it is necessary to filter broth through a gauze, to mix with sugar and to put to cook on small fire of 40-50 minutes from the moment of boiling. We spill hot jam on banks and we close covers.

2.     Dandelion jam with a lemon

For this recipe it is necessary to take: 800 ml of water, 300 dandelions, 1 lemon, 1 kg of sugar.

We wash out flowers, we presoak, we exempt from a receptacle, as well as in the previous recipe. Further they need to be filled in with water, to add the lemon cut by segments without stones, but with a dried peel. Cook 40-45 minutes on small fire. Cool and allow to infuse 12-14 hours. After time we filter broth, we pour sugar and again we cook 10 minutes. Again to cool and uvarit 6-8 minutes to the necessary density.

3.     Jam with lemon segments

The same ingredients, as well as in the previous recipe. The difference is that the lemon which is completely cleaned from stones and a dried peel is cut on slices and is added to dandelion syrup during the second cooking.

4.     Dandelions jam with citrus notes

It is required: 350 dandelions, 1 liter of water, 1 orange or grapefruit, several leaves of currant, 1 kg of sugar.

We prepare dandelions: we cut off a green part, we fill in with water. Further it is necessary to peel orange, to separate stones, to cut it on slices and to send to dandelions. We add the washed-out currant leaves to a pan too. We put to cook for 15 minutes, we cool and we allow to infuse not less than 10 hours.

Infusion needs to be filtered, added to it sugar and to cook, stirring slowly with about an hour.

5.     Jam without cooking

Ingredients: 350 dandelions, honey (at the rate of the 2nd tablespoons on a floor of liter of flower puree).

We dry up well washed out flowers by means of a paper towel, we delete a receptacle and we crush the blender. It was necessary only to mix the turned-out weight with honey and jam is ready.
