The real fans of low alcohol alcoholic beverages prefer to make them in house conditions independently. Especially it concerns those at whom on a personal plot a large number of various berries and fruit grows.

To make domestic wine, the natural juice from berries or fruit, sugar and water is required. Juice can be received by a usual extraction by means of the juice extractor. Before it berries and fruit carefully wash out and dry up. For this purpose it is possible to use a colander.

Some berries to receive a natural juice (a gooseberry, plum, blackcurrant), subject previously to heat treatment. To remove pulp from the turned-out juice, it is passed through a linen or woolen bag. Then add water and sugar for decrease in its acidity and a possibility of independent fermentation to juice. On average on liter of juice add 500 ml of water and 350 g of sugar. Such mix is called a sweet wort.

Further mix is placed on fermentation. For this purpose use glass large bottles up to 15 l. They are filled with a mash approximately on 2/3 from all volume. For the correct fermentation it is better to use natural yeast which can be found on a surface of berries and fruits. But for bigger confidence it is possible to add a little raisin. He not only is a source of such yeast, but also will make taste of domestic wine more saturated.

From above the large bottle is closed a stopper from any material which well passes air, and place it in the dark place. Sometimes at insufficient fermentation add a little grain yeast to a mash.

Wine has to ferment about 3 weeks, and then 2 more weeks go clarification process. At this time all firm particles drop out in a deposit, and sugar turns into alcohol. As a result drink with alcohol content about 15% will turn out.

Then the large bottle is carefully put on the sublime place, for example on a table. On a floor put other capacity in which will decant ready wine. For this purpose the small hose one end is lowered in a large bottle, and to others in this capacity. Merge carefully without deposit.

Further wine is spilled on bottles and stop up them with traffic jams. For storage use dark and cool places. Before the use it is possible to add a little sugar to wine. In advance it is better not to do it – repeated process of fermentation can begin, and wine will lose all taste. No more than one year are recommended to store any domestic wines.

As ingredients for preparation of wine it is possible to use: apples, black and red currant, cherry, chokeberry, blueberry, strawberry, raspberry, guelder-rose, apricots, grapes, gooseberry, sea-buckthorn and other berries and fruit.
