How to make the Bulgarian drink ""bouza"

The bouza is a traditional Bulgarian drink which is capable to replace the bothered teas or coffee. Distinctive feature of a bouza – a slightly acid flavor and good effect of satisfying of thirst. Ingredients which always are in stocks practically of each hostess will be necessary for you for preparation of this drink.

It is required to you

  • - oat flakes – 1 kg
  • - a desi – 100 гр
  • - yeast – 30 g
  • - flour (wheat) – 2/3 glasses
  • - sugar – 0.5 kg

Instruction

1. Place grits in water. For this purpose it is necessary to pour out grain in a big bowl and to fill in it with warm water. Water it is desirable to use boiled. Leave for 10-30 minutes that porridge was softened and I inflated. When grain is soaked, to filter it and to pound by means of a rolling pin.

2. Put the soaked grain in in advance warmed oven. Pay attention that fire in an oven has to be slow if it is gas. If the oven electric, then power has to be lower than average. It is necessary in order that grain was slightly dried.

3. Crush the dried-up grain in flour. For this purpose it is possible to use a mortar or the grinder (blender).

4. Mix oat flour, wheat flour and a desi. For this purpose place the specified ingredients in a big pan and carefully mix everything.

5. Fill in the received mix with boiled water. The amount of water is defined as follows: stirring slowly with mix, slowly add water to a pan until weight doesn't become testopodobny. As soon as you received the necessary consistence, put a pan to the warm place approximately for half an hour.

6. Add boiled water. Put drink there where it will most quicker be cooled to room temperature, but not in the fridge.

7. Add a half of sugar (it is about one glass) and yeast. Put mix on fermentation.

8. Dilute the "suitable" mix with boiled water, mix and filter. Pour the second half of sugar, mix and leave to wander further.

9. Check whether the bouza rose. If it rose and became sourish on taste, then your drink can be considered ready!

10. Put ready drink to the cool place, for example, in the fridge. If taste of a bouza insufficiently sweet for you, it is possible to pour sugar both in a pan, and in every portion separately.
