How to make the Uzbek flat cakes

The Uzbek flat cakes are well-known for the special aroma, high caloric content and labor input of preparation. This dish of Uzbek cuisine has to be baked in the special furnace called the tandoor.

It is required to you

  • For the first recipe:
    • 1 kilogram of flour;
    • 30 grams of a fresh yeast;
    • water;
    • For the second recipe:
    • 1 kilogram of flour;
    • 30 grams of a fresh yeast;
    • water;
    • salt;
    • set of herbs.

Instruction

1. To make simple home-made flat cakes, take a bowl and dissolve 30 grams of a fresh yeast in two glasses of salty warm water. Gradually add 500 grams of flour to yeast. Knead dough and add 500 more grams of flour, diluting with water so that stiffdough turned out not too. Cover a bowl with a towel and put dough to wander to the warm place. Process of fermentation can last within several hours. Readiness of the test will be reached when its volume increases twice and outside bubbles will appear.

2. Lay out dough on a cutting board and cut on pieces weighing about 300 g. Give to each piece the form of a sphere and cover with a napkin. Make flat cakes which thickness in the middle wouldn't exceed 0.5 centimeters of preparation, and at the edges – 2 centimeters. In the center of flat cakes make several punctures a fork. Heat the tandoor within 15 minutes. Put flat cakes on slow motion, slightly moisten with salty water and put in the furnace. As soon as flat cakes become ruddy, take out them from the furnace and cool.

3. For preparation of flat cakes on grass infusion knead the same dough as in the previous recipe, only instead of water use grass infusion. For its preparation take by one part of escapes of mint, a shepherd's bag, an orach, a dandelion, a horse sorrel, spinach, a portulak, greens of garlic and onions. Miss all ingredients via the meat grinder and fill in the turning-out forcemeat with one liter of warm water, filter infusion and on its basis knead dough. As soon as dough rises, cut it on pieces weighing about 300 grams. Roll from them spheres, cover them with a napkin and let's infuse 15 minutes. Make of preparations of flat cake 1.5 centimeters thick, pin on all surface a fork and bake in the tandoor as it is specified in the previous recipe.
