Udon is traditional Japanese noodles for which preparation wheat flour is used. Udon can be the independent dish served with sauces, or a garnish for vegetables, shrimps and meat. Udon is easily acquired by an organism and quickly satisfies feeling of hunger.

- Ingredients on 4 persons:
- - chicken broth – 200 ml;
- - chicken breast – 2 fillets;
- - noodles udon – 300 g;
- - dried mushrooms to a shiitaka – 10-15 pieces;
- - garlic – 2-4 cloves;
- - a ginger root – 3 centimeters;
- - tablespoon of any Chile paste;
- - a light soy-bean sauce – 3 spoons;
- - green onions – a small bunch;
- - 3 spoons of vegetable oil;
- - cilantro for ornament.
1. We warm up chicken broth, we put in it dried mushrooms to a shiitaka, we leave for 1 hour that they are razmokl. Then we filter infusion, but we don't pour out it. Shiitake is sliced identical the small size.
2. We cut chicken breasts lengthways that there were 4 flank steaks, we grease with Chile paste from all directions, we wrap each part in the food wrap which is in advance oiled from within by vegetable, we leave for 1 hour at the room temperature.
3. Udon we boil noodles according to the instruction on packing, but we don't cook longer a little. We wash noodles with cold water, we throw back on a colander that excess liquid flew down.
4. We warm an oven to 160 degrees. We put chicken fillet in food wrap on a cold baking tray, we send to an oven for 15-20 minutes (depending on the initial size of chicken breasts).
5. We clean garlic and ginger and we crush most small. Small we cut green onions.
6. In a wok we warm oil on the maximum fire, within 30 seconds we fry garlic, ginger and green onions, constantly mixing. We add mushrooms, we pour in infusion from mushrooms and a soy-bean sauce. Without reducing fire, we cook 2 minutes. We spread noodles in a frying pan, we mix, we warm up within 2 minutes, we remove from fire.
7. Chicken fillet is beautifully cut obliquely that slices 1-1.5 cm thick turned out. We display noodles on plates, from above we spread chicken, we strew with the crushed cilantro, at once we give on a table.
