How to pickle cucumbers in banks

Cucumber pickles – very good snack. Crunchy cucumbers of the small size – gherkins are especially tasty. And it is absolutely optional to buy them in shop, it is so simple to roll up several jars for the winter in house conditions.

It is required to you

  • On 1 liter of a brine:
  • - 700-800 g of gherkins;
  • - fennel umbrella;
  • - 2 leaves of blackcurrant;
  • - third of a leaf of horse-radish;
  • - 2 leaves of cherry;
  • - 3 garlic gloves;
  • - teaspoon of seeds of mustard;
  • - 5 peas of a black pepper;
  • - 2 tablespoons of salt;
  • - 3 tablespoons of sugar;
  • - 100 ml of 9% vinegar.

Instruction

1. For pickling pick up equal small cucumbers, 5-6 cm aren't longer. Wash up them and fill in with cold water for 2-3 hours. It is necessary in order that after sterilization the cucumbers weren't wrinkled and remained crunchy.

2. During this time prepare banks. It is better to pickle cucumbers in one-liter jars, in half liter and 700-gram under tin covers which roll up the machine, or under twisting. The last it is more preferable as simplify process. Wash up banks, sterilize over steam or fill in with boiled water for 10-15 minutes. Covers have to be without rust and other damages. Wash up them and boil 15 minutes. Place the clean, sterilized banks and covers on the ironed napkin or a towel and be engaged in cucumbers.

3. On a bottom of cans put the garlic cut on 2 parts, the cut leaf of horse-radish, the whole leaves of cherry and currant, fennel. Get cucumbers from water, rinse a baking plate with the crane and densely stack in banks.

4. Put two pans on fire. One with a clear water, in the second make a brine. On 1 l of water add 100 ml of vinegar, 2 tablespoons of salt and 3 tablespoons of sugar. Bring to the boil.

5. Fill in banks with usual boiled water and cover with covers, don't roll up. In 10 minutes drain water and again fill in with boiled water. For the third time fill in with a brine, previously having filled seeds of mustard and having put bell pepper. Roll up, turn upside down and wrap up with something warm. In several hours the cucumbers can be got and placed in storage.

6. It is possible not to roll up cucumbers at once, and to sterilize in water. For this purpose it isn't necessary to fill in them with boiled water, and at once pour the cooled-down brine. Put cups in a big pan with water which has to cover them on a coat hanger. Cover with covers, don't roll up. Include fire. When water begins to boil, note time. One-liter jars require sterilization of 40 minutes, for half liter – 20 minutes. After that roll up, turn upside down and leave before cooling. It isn't necessary to wrap up, otherwise cucumbers will become soft.
