  • - chicken breast - 500 g;
  • - sea salt - 250 g;
  • - cognac - 50 ml;
  • - pepper;
  • - paprika;
  • - any spices.

Instruction

1. First of all it is necessary to wash properly chicken breast a baking plate with flowing water. Then let's it dry completely.

2. Connect such ingredients in quite deep ware as: paprika and pepper. If desired to this mix add any other spices to the taste. Properly mix educated dry weight from seasonings then from all directions roll in in it chicken meat. Then grate it with sea salt and fill in with cognac. By the way, if you have no sea salt, then replace it usual. Only don't forget to reduce in this case its quantity to 200 grams. In such look send meat, having covered, in the refrigerator approximately for 10-12 hours.

3. After passing of the set period take chicken meat from salt solution, carefully wash its baking plate with flowing water to remove all salt and seasonings from a surface. You shouldn't keep a breast in solution longer than the specified time.

4. Having blotted chicken meat with tissues or a towel, wrap up it in several layers of a gauze and place in the refrigerator not less than for day. The balyk from chicken is ready! If you want fillet to be dried stronger, then take a breast in the fridge for 3-4 days.
