How to prepare a berry dessert "Pavlov

The tasty air protein whips, cream, berries and fruit dessert received the name in honor of the famous ballerina Anna Pavlova. However to the true ballerinas and everything, watching over health and a figure, it isn't necessary to abuse it – delicacy rather kaloriyno. It is required to you

  • Meringues of Pavlov:
    • 2 proteins;
    • 100 g of sugar;
    • 1 teaspoon of starch;
    • vanillin;
    • 5 teaspoons of vinegar;
    • 300 ml of dense cream;
    • 2 bags of vanilla sugar;
    • strawberry
    • blackberry
    • raspberry and grapes for ornament.
    • Cake of Pavlov:
    • 3 proteins;
    • 150 g of sugar;
    • 5 teaspoons of starch;
    • vanillin;
    • 1 teaspoon of vinegar;
    • 300 ml of dense cream;
    • 2 bags of vanilla sugar;
    • 100 g of sugar for syrup;
    • 2 tangerines;
    • 2 pears;
    • strawberry and grapes;
    • dried peel of one lemon;
    • fresh mint for ornament.

Instruction

1. The dessert can be portion – in the form of small baskets from meringues, - or to remind big cake with fruit. For a start try to make the Pavlova cakes. Carefully separate the whites from the yolks and pour out them in a deep bowl. That whites were beaten better, get eggs from the fridge in advance and never try to shake up absolutely fresh eggs.

2. The mixer or a nimbus beat whites before emergence of sharp "peaks". Gradually pour out a half of a portion of sugar in aerated mass, continuing to pound it before formation of uniform glossy cream. Add the remained sugar, starch, vanillin, vinegar and once again shake up weight – it has to get density. You don't hurry – qualitatively protein whips – guarantee of beauty of a ready dessert.

3. Lay a baking tray parchment paper and put protein whips in the form of round small baskets with a flat bottom and sides. Establish a baking tray in the center of the oven which is previously warmed up to 150 degrees. Bake about an hour at a low temperature till light brown color. Remove meringues from paper until they managed to cool down, otherwise they will stick.

4. Shake up dense cream with vanilla sugar. Lay out them in the center of completely cooled down small baskets. Cut berries of strawberry and large grapes in half. Lay out them over cream, having added a little bilberry, blackberries or raspberries.

5. On a holiday table surely prepare a big basket of a dessert of Pavlov. It looks very effectively and will make a great impression on guests. Prepare proteinaceous weight according to the previous recipe. Lay two baking sheets parchment paper. On one lay out a big circle with sides – future basket for fruit. On another, by means of a pastry bag, transplant two arc-shaped handles.

6. Put baking sheets in a warm oven and bake about one and a half hours. Check readiness, having carefully got a baking tray with a basket from an oven. Its edges have to dry up and get completely a beige shade, and the bottom to remain soft. Carefully remove preparations and shift them to a dish.

7. The big basket can be filled not only with berries, but also fruit. Peel two pears from a thin skin and seeds. Put sugar and a lemon dried peel in a stewpan, add 300 ml of water. Put mix on fire and warm up to full sugar remelting. Put in syrup of pear and you cook about 2 minutes then take out and cool. Peel two tangerines, choose large and beautiful berries of strawberry and black grapes.

8. Shake up 300 g of cream with vanilla sugar. Lay out cream in a basket, over them beautifully lay out fruit. On each side baskets by means of whipped cream attach handles. Boil syrup of 10 minutes till golden color. Slightly cool it and water fruit. Decorate a dessert with leaflets of fresh mint.
