How to prepare eclairs in house conditions

Eclairs - the classical French dessert which is thought up by the cook Mari Antawn Karen. This tasty and refined delicacy can be bought in shop and also to prepare in house conditions.

For preparation of custard paste it will be required to you:

- wheat flour - 150 g;

- egg - 4 pieces;

- a desi - 70 g;

- water - 250 ml;

- salt - on a knife tip.

For cream of eclairs it will be required:

- sugar - 65 g;

- milk - 350 ml;

- a desi - 75 g;

- starch - 30 g;

- vanillin - 20 g;

- cream (30%) - 200 ml.

1 stage — preparation of custard paste for eclairs

For a start it is necessary to make custard paste which recipe rather simple and easily feasible in house conditions. For this purpose in a pan a scurf water, add salt on an edge of a knife and put a pan on fire until water doesn't begin to boil.

Now it is possible to add a desi to water and to allow to begin to boil once again. Then it is necessary to pour wheat flour a thin stream, constantly stirring slowly that there were no lumps. Make small fire and you cook pan contents for those, a time so far mix won't become dense. In process of solidification add on one egg, without forgetting to stir slowly at the same time constantly.

Oil a baking tray creamy or vegetable and powder with flour. In a pastry bag lay out elastic custard paste and create cakes, having length of 10 centimeters, and width of 5 centimeters. Don't forget between eclairs leave distance in 2-3 centimeters.

Warm an oven to 200 degrees, put in it a baking tray and bake cakes about 15 minutes, then make fire less and prepare eclairs about 20 minutes. Keep in mind that it is impossible to open an oven at all not to change temperature condition.

2 stage — preparation of custard for eclairs

Meanwhile, so far custard paste is cooked, need to make custard. In a small pan boil 100 ml of milk, and then add to it starch, mix that there were no lumps. Remove milk from a plate and leave to cool down at the room temperature. Connect vanillin, sugar and butter and add to the cooled-down milk. Add whipped cream to mix.

3 stage — a stuffing of eclairs

Cool ready eclairs a little, and then make small cuts and fill each eclair with custard.
