""Golden syrup"" (golden syrup, literally from English - ""golden syrup"") - the frequent ingredient in recipes of the English and American cuisines used generally as honey substitute for allergic persons. Unfortunately, it is sometimes difficult to buy it therefore I suggest to make it independently.
It is required to you
- The first stage of preparation:
- - 240 g of sugar;
- - 60 g of water.
- The second stage of preparation:
- - 1.2 kg of sugar;
- - 720 g of water;
- - 60 ml of fresh lemon juice.
Instruction
1. In a big frying pan (it is also possible to use a thick-walled non-stick pan) on the minimum fire to kindle 240 g of sugar with addition of 60 g of water. From time to time the frying pan needs to be rotated with circular motions that sugar karamelizirovatsya evenly.
2. Boil 760 ml of water. As soon as mix in a frying pan became dark brown color, carefully to pour in the boiling water there, to add other sugar and fresh lemon juice.
3. Put a ring on the maximum fire. Wait until contents of a frying pan begin to boil, and again to lower fire to a minimum. Boil syrup within 45-50 minutes, sometimes stirring slowly with a wooden rake.
4. Banks in which you are going to pour syrup, carefully to wash up and wipe. Pour ready syrup in a container (I recommend to use a funnel as to pour out syrup of a frying pan not really conveniently), to close and store in the cool place.
