Tasty and useful winter preparations from beet will be prepared even by not too experienced culinary specialist. Home-made canned food can be used as cold appetizer or a podgarnirovka, to add them to salads and soups. At the correct preservation the root crop keeps a considerable share of vitamins, amino acids, celluloses.

Pickled beets slices

Such beet can be used for a podgarnirovka, preparation of salad or as independent snack. The dish will turn out not too high-calorie and very tasty.

Ingredients:

  • 10 strong young people svekolok;
  • 5 glasses of granulated sugar;
  • 2 чл. l. salts;
  • 1 glass of water;
  • 5 glasses of apple cider vinegar.

Wash up beet a brush, put it in a big pan and fill in with water, having added 1 tsp of salt. When water begins to boil, reduce fire, cover a pan and you cook root crops about 60 minutes. Readiness is checked by a fork, beet has to become soft.

Drain water, slightly cool root crops, rind. Slice beet accurate. Return them to a pan, add salt, sugar, vinegar and water. Bring everything to the boil and you cook 5-7 minutes on average fire. Spread out ready slices on previously sterilized banks, fill in with a warm marinade. Turn the banks which are hermetically closed by covers and wait for their cooling. Then marinade can be removed on storage. Beet is perfectly combined with fried meat, sausages, herring, stewed or fried potato.

Caviar from beet and vegetables

Very tasty snack – the crushed beet with carrots, pepper and garlic. Caviar is suitable for preparation of sandwiches or tartlets. 

Ingredients:

  • 3 kg of young beet;
  • 2 kg of carrots;
  • 2 kg of a paprika;  
  • bunch of greens of parsley and fennel;
  • 2 heads of garlic;
  • 1 glass of purified vegetable oil;
  • salt;

Wash up vegetables, remove seeds from pepper, carrots, beet and garlic clean. Miss vegetables via the meat grinder or crush in the kitchen processor. Small cut greens, lay out in a pan, you will add vegetable puree, salt, pepper, oil. Bring mix to the boil, reduce fire and cover a pan. You stew caviar 1.5 hours, periodically stirring slowly.

Spread out a ready-made product on the sterilized banks and roll up covers. Beet vegetables salad is stored in the cool dark place, it isn't obligatory to remove preparations in the fridge.

Winter preparation for borsch

During a season of gathering vegetables it is possible to prepare tasty gas station which will allow to cook quickly and tasty home-made borsch.

Ingredients:

  • 2 kg of beet;
  • 1 kg of onions;
  • 1 kg of carrots;
  • 5 kg of a paprika;
  • 5-6 large garlic gloves;
  • 1 kg of ripe tomatoes;
  • 1 glass of purified vegetable oil;
  • 1 glass of vinegar;
  • 300 g of granulated sugar;
  • 100 g of salt.

Carefully wash up vegetables and clean. Grate carrots and beet, scald tomatoes boiled water and husk. Cut tomatoes, pepper, onions in medium-sized cubes, miss garlic through a press. Put vegetables in a deep pan.

In a stewpan mix vegetable oil, salt, sugar and vinegar. Fill in a vegetable mix with marinade, well mix, close a cover and leave for 1 hour. Then place a pan on a plate, bring mix to the boil and you extinguish on average fire about 30 minutes. Spread out gas station on clean dry banks and roll up covers.
