How to preserve cucumbers

Tinned vegetables become a fine alternative fresh in the winter. With their use it is possible to prepare many dishes, having made food more various. Pickles are used not only as cold appetizer, but also for preparation of rassolnik, sauces, salads, meat dishes. How to preserve cucumbers that in the winter to receive a quality appetizing product?

It is required to you

  • For a vinegar pickle on 1 l of water:
    • 50 g of salt;
    • 25 g of sugar; sugar - 25 g.
    • 80-100 g of 9% vinegar.
    • For sourer marinade on 1 l of water:
    • 30 g of salt;
    • 25 g of sugar;
    • 125 g of 9% vinegar.

Instruction

1. Fill in collected cucumbers for 2-3 hours with cold water.

2. Well wash out one-liter glass jars with means for washing of ware, carefully rinse in a large amount of flowing water.

3. Wait for full drying of cans. Put them on a metal baking tray so that banks didn't adjoin with each other.

4. Put cups in a cold oven. Heat it to 200 degrees. Calcinate banks in an oven within 15-20 minutes.

5. Disconnect an oven from food and leave in it banks before full cooling.

6. Carefully wash out cucumbers, remove all flowers. Cut off tips of cucumbers from two parties.

7. On a bottom everyone cooled down banks put 3 leaves of blackcurrant, 2-3 garlic gloves, a fennel umbrella, 3-4 tacks, 1 bay leaf, 2-3 peas of allspice.

8. Densely lay the prepared cucumbers in banks. For pickling take cucumbers of 5-8 cm in length.

9. Fill in cucumbers with boiled water. It is necessary to do it slowly to avoid emergence of cracks on banks. Cover banks with metal covers and leave for 20-30 minutes.

10. Drain water from cans with cucumbers in a pan from stainless steel. Add to a pan salt and granulated sugar according to the chosen recipe of marinade. Bring water to the boil, stir salt and sugar before full dissolution and you boil marinade of 10 minutes.

11. Remove a pan from fire, pour in vinegar in marinade.

12. Put metal covers in a saucepan, fill in with water and boil within 10 minutes.

13. Fill in cucumbers with a warm marinade, cover boiled and close to bank by means of the seamer.

14. Holding bank with the left hand, right carefully twist a cover. It shouldn't be scrolled around a neck. If it occurs, once again roll up to bank the seamer. Be careful, use a towel!

15. Turn to bank on a cover and wrap up it in a blanket. Leave in such situation for 12 hours. Further you store preparations in the cool room.
