Russian salad salad - one of favourite recipes of the Russian hostesses, a rare New Year's table does without this favourite dish. At the same time to refuse it there is no need even that who keeps to a diet. There is enough only by means of simple actions to reduce caloric content of this salad.

Recipe of "Russian salad"

The traditional recipe of Russian salad salad which is most often used for its preparation really includes a number of the high-calorific ingredients providing considerable energy value of a ready-to-eat meal. So, obligatory components of traditional salad are boiled potatoes and eggs, pickles, green peas and also a boiled sausage and mayonnaise.

At the same time preparation of salad assumes mixing of these components in certain proportions which cause the caloric content of a ready-made product. So, for example, standard amount of potatoes on such salad - 2 potatoes of the average size which will provide about 150 kilocalories. Two eggs as a part of salad will give 160 more kilocalories, pickle of the average size - about 15 kilocalories, 100 grams of green peas - 40 kilocalories. At the same time the most high-calorie components of the recipe are a boiled sausage which 150 grams will add to salad of 385 more kilocalories, and mayonnaise. Usually put about 100 grams of mayonnaise on preparation of such amount of salad that adds about 630 more kilocalories to its energy value.

Thus, at the exit about 750 grams of salad which general caloric content is 1380 kilocalories turn out. That is the caloric content of 100 grams of a ready-made product is about 185 kilocalories.

Decrease in caloric content

The analysis of structure of the recipe of Russian salad salad shows that the contribution of its such components as, for example, green peas or pickle in the general caloric content of a ready-to-eat meal is minimum. Therefore it makes sense to try to reduce its energy value at the expense of the most high-calorie ingredients - a boiled sausage and mayonnaise. So, for example, a boiled sausage as a part of the recipe without special damage to taste of a ready-to-serve salad can be replaced with boiled chicken breast without skin. For comparison — the caloric content of 100 grams of a boiled sausage is 257 kilocalories whereas chicken breast without skin - 113 kilocalories. Considering that as a part of the recipe there are 150 grams of this product, the general caloric content of salad will be reduced more than by 200 kilocalories. It is quite possible to replace mayonnaise with sauce on the basis of kefir or the low-fat yogurt mixed with mustard. For example, if for preparation of necessary 100 grams of such sauce to take 80 grams of one-percentage kefir and 20 grams of mustard, the general caloric content of such sauce will be 62 kilocalories. Considering that 100 grams of mayonnaise contain about 630 kilocalories, decrease in energy value of a ready-to-eat meal due to this replacement will be about 570 kilocalories. Thus, having made these simple changes in the recipe, it is possible to achieve that the similar amount of salad will contain not 1380, but about 600 kilocalories any more. That is the caloric content of 100 grams of a ready-made product will be only about 80 kilocalories.
