There are many various ways of salting cucumbers. Each hostess has the recipe and secrets of conservation. It is possible to call this recipe genre classics.
Ingredients (on a one-liter jar):
- Cucumbers fresh – 500 g;
- Fennel-2 branches;
- Garlic - 2 cloves;
- Black pepper (peas) – 5 pieces;
- Citric acid;
- Bay leaf - 1 piece.
Ingredients for a brine:
- Water - 1 l;
- Salt - 2 spoons of dining rooms;
- Sugar - 3 spoons of dining rooms.
Preparation:
- To fill in fresh strong cucumbers of the small size with cold water and to wet in water for two hours. It becomes in order that when flooding cucumbers the brine in a consequence didn't create emptiness. Fennel branches with umbrellas to wash a baking plate with water. Peel garlic from a peel.
- On a bottom to put fennel, two garlic gloves, peppercorn, bay leaf in the one-liter jar which is washed out with soda. Get the wetted cucumbers from water and wash a baking plate with water. As the bank can fill with the prepared cucumbers more densely.
- Stir in water liter salt with sugar and boil a brine. Then without removing a pan from a plate that the brine constantly boiled, to fill in with it cucumbers in bank and to leave for 10-15 minutes. After the expiration of time to merge a brine from banks and again to boil.
- Fill in cucumbers with the boiling brine the second time, to pour a brine so that cucumbers were completely closed. At the end to add a small amount of citric acid or vinegar. To bank to roll up and turn several times that citric acid was dissolved. Then to bank to turn upside down and to put a baking plate a fur coat before full cooling.
- Proceeding from this compounding it is possible to add various ingredients to cucumbers: leaves of currant or cherry, horse-radish and others. In the winter such cucumbers are good with fried or boiled potatoes, they can be used in soups and salads. The brine at such cucumbers doesn't grow turbid and it can be used for preparation of mustard.
