Moreover, production of drink in the Province of Champagne doesn't mean yet that it will belong to this category. The special international committee of champagnes approved the list of rules of production for all those who want to call the products ""champagne"".

It is possible to make champagne only of certain grades of grapes. They are six, but three are most often used - a pin noir, Chardonnay and Meunier's pin. Also it is supposed that berries need to be picked manually, to press accurately, without desteming at the same time. In rules there are accurate instructions as it is necessary to cut off a rod, to make an extraction when to reap a crop, also norms on organoleptic characteristics of a wingorad are registered. It is necessary to mature champagne not less than one and a half years. And of course, in a case with champagne the artificial gassing is excluded - drink can be produced only by method of afterfermentation of wine in a bottle.
