We bring to your attention original meat snack which can be made in two options. One option is preparing with prunes, and the second with cowberry. Each of options is in own way special and very tasty. The only minus of this dish – long preparation. But it is completely compensated by unforgettable taste and aroma of a meat dish.

Ingredients:

  • 3 kg of pork;
  • 2 kg of pork liver;
  • 150 g of a goose (duck) liver;
  • 400 ml of port wine;
  • 1 slice of white loaf;
  • 2 egg whites;
  • 4 tablespoons of sour cream;
  • ½ tsps of ginger;
  • 2 tsps of salt;
  • 1 tsps of a black pepper;
  • 1 tsps of a dry thyme;
  • 50 g of prunes;
  • 25 g of cowberry.

Preparation:

  • To wash pork with a liver, deleting various films and inclusions, to cut and put randomly in a bowl.
  • Crush ginger by means of a small grater and lay out to meat with a liver. There to pour in wine, to pour a black pepper and a dry thyme.
  • From a slice of bread to cut off a crust, small to knife pulp and too to add to meat weight. There to hammer proteins and to pour in sour cream. This weight properly to mix, cover and place for 12 hours in the fridge.
  • After meat weight infuses, it is necessary to pass it at least two times via the meat grinder with a small network, and then to divide into two equal parts.
  • Pass prunes via the meat grinder and connect to one part of mincemeat. Cowberry small to knife and implicate in the second part of forcemeat.
