It is required to you

  • - 1.2 kg meat of a turkey;
  • - on 200 ml of white dry wine, chicken broth;
  • - 10 garlic gloves;
  • - 3 tablespoons of olive oil;
  • - lavrushka, salt, pepper.
  • For sauce:
  • - 750 g of tomatoes;
  • - 150 g of black olives;
  • - 100 ml of dry white wine;
  • - 2 onions shallots;
  • - 3 garlic gloves;
  • - 4 branches of a basil;
  • - 2 tablespoons of olive oil;
  • - 1 h spoon of a dry oregano;
  • - parsley, salt, pepper.

Instruction

1. Curtail meat of a turkey into a plait, from above put on a network (it is possible just to roll up a thread), a sharp knife do numerous superficial cuts in meat. Peel five garlic gloves, cut lengthways and stuff with it meat, further salt and pepper it from all directions.

2. In a deep frying pan heat olive oil, fry meat to a crust from all directions. Then shift it in a baking dish.

3. Pour in a frying pan in broth with dry white wine, add bay leaf, bring to the boil, let's boil a little. Crush the remained five garlic gloves, put it in a form to meat. Fill in with sauce from a frying pan, densely close a foil and put in the oven which is warmed up up to 180 degrees for 1 hour.

4. Fill in tomatoes with boiled water, take them in it minute, pull out from boiled water, drench with cold water, clean from a skin, cut small into cubes. Peel onions shallot, small chop it. Too peel garlic for sauce, chop. Chop leaves of parsley and a basil more small.

5. In a frying pan warm olive oil, fry tomatoes, onions and garlic within 5 minutes. Add a lavrushka, an oregano, pour in wine. Pepper and salt sauce to taste.
