Instruction

1. Clean, divide potatoes into 3–4 parts, put in the boiling added some salt water and cook, having covered, within 17–25 minutes, until ready, then to pour out water. Place a stewpan with potatoes on small fire for 1 minute that it well dried. Turn potatoes into puree, add salt and pepper.

2. Make sauce béchamel. Soften a desi in a pan, add flour and to fry slightly within a minute, stirring. Add milk and prepare, continuing to disturb, on small fire of 8-11 minutes until sauce thickens. Add a little grated parmesan, season with salt and pepper and to cool.

3. Separate the whites from the yolks. Mix mashed potatoes with sauce, yolks and mustard. In a cup to beat whites to density and to add to mix.

4. Heat an oven to 190-210 degrees. Move ready weight to previously oiled molds. Put from above the remained parmesan. Bake 27–37 minutes until souffle rises and will gain gold color. Give on a table of souffle hot.
