Focaccia - the Italian flat cake which is the typical recipe of the region of Liguria. The real focaccia can be tasted in small bakeries of the city of Rekko, they kept traditions of preparation and baking of this flat cake in furnaces. You will be able to learn all secrets of craft if you work in such traditional bakery. But as to make it not so simply, it is possible to make focaccia with house cheese, on the simplified recipe, and it turns out same tasty at the minimum set of products.

It is required to you

  • 250 ml warm water
  • 3 tablespoons + 1 tablespoon of olive oil or sunflower
  • 500 g of wheat flour
  • 1 h l of salt
  • 1 tsps of a yeast powder
  • 280 g of any cheese
  • 1 h l of mix of dry Provence herbs (rosemary, thyme, basil, peppermint, sage, oregano (oregano), chaber garden, marjoram) or fresh basil and fennel

Instruction

1. Take a bowl, add 250 ml. warm water and 1 tsp of a yeast powder to leave for 10 min. so far yeast won't begin to work (if necessary add a sugar pinch for speed of yeast).

2. Add 3 tablespoons of olive (sunflower) oil, 1 tsp of salt, mix.

3. Sift 500 g of flour, knead dough manually within 10 minutes until dough becomes homogeneous and soft, and it becomes good to separate from hands. As necessary add a little flour or a little water.

4. Wrap up dough in food wrap or cover with wet towel wipes, leave for 40 minutes in the warm place until dough rises. Include an oven to heat up to 230-270 °C.

5. Roll with a rolling pin not really thin crust in the form of flat cake, make a finger several deepenings and water 1 cup of olive (sunflower) oil.

6. Strew with a grated cheese and dry herbs (in the presence - a fresh basil and fennel).

7. Place flat cake in the oiled baking pan or on a baking tray. Bake 15-20 minutes before emergence of a golden crust.
