Interesting addition to any garnish. Preparation of a tasty and rich dish doesn't require a special set of ingredients that favourably distinguishes this recipe from some other. Gentle and juicy meat can be used also as a delicacy on a holiday table.

It is required to you

  • 2 kg of veal (scapula), 1 tablespoon of a desi, 1 tablespoon of vinegar, 2 garlic gloves, sprinkling pepper, salt.


1. We separate meat from bones, we wash thoroughly, we beat off. We sprinkle vinegar and we put for an hour in a cold spot, it is possible in the fridge. Most ideal – on a balcony.

2. Then we grate meat with garlic, we salt, we pepper, we turn in roll, we tie up a thread, we fill in with the added some salt boiled water and we cook on small fire of 20 minutes. It is more convenient to do it in a small pan.

3. We take out from water, we turn in the oiled parchment paper and we bake in a hot oven to full readiness. Temperature for cooking – 200-220 degrees Celsius.

4. We slice ready veal and we give hot to a table. As a garnish it is possible to use boiled rice and green peas.
