Any guest of Udmurtia, that it was stretched between the Urals and Vyatka, professional cooks and amateur culinary specialists will surely feed with a favourite national dish – refurnaces. Well-known viands – small baskets tartlets from the test with different stuffings – became really cult national dish. The name at figured cheesecakes saying: "in front of the oven", before fire. The Udmurt refurnaces are usually prepared for holidays though traditionally these tasty pastries can be tried not only on a solemn feast at restaurant, but also to try during an ordinary meal in cafe or the dining room. For a stuffing - 1 kg of fresh mushrooms, 2 big bulbs, for omletny filling - 4 eggs, 200 ml of milk, salts, pepper – to taste.

Mushrooms and onions are crushed and fried previously with onions in amount of creamy or vegetable oil, sufficient for the chosen grade of mushrooms. Dough is kneaded and divided into equal balls from which by means of a rolling pin flat cakes with a diameter from 8 to 10 cm roll out. Edge of flat cakes "zavaltsovyvatsya" accurately for formation of necessary sides, and the received "saucers" podpekatsya in the furnace or an oven a little - at first without filling. Then baskets are filled with mushroom forcemeat, filled in with mix from eggs and milk and baked at a temperature of 180 degrees approximately within 15 minutes.
