Vegetable caviar

It is the best of all to cook this dish in the fall when eggplants and squash are cheaper. But nothing prevents to prepare it both in the spring, and in the summer and if very much it wants to return summer mood, then even in the winter.

Ingredients:

Squash – 1 big or 2 small

Eggplants - 1 big or 2 small

Carrots – 2 pieces.

Paprika, red or yellow – 1 piece.

Onion – 1 piece.

Garlic – 2 segments

Fresh greens - cilantro, parsley, a basil

Salt, curry, pepper red and black.

Purified olive oil for frying.

Optionally - teriyaki sauce, red balsam vinegar, a lemon.

Wash all vegetables. Cut eggplants thin plates and put in salty water for 20-30 minutes.

To cut squash, carrot, onions and eggplants which rested in bed in salty water with small squares on 1 cm. If there is a vegetable cutter, then it is better to use it, then pieces will turn out more equal, and a general view of a dish – more festive. It is possible to use also a usual knife.

In a big frying pan with a thick bottom to warm purified olive oil with a small amount of salt that oil wasn't sprayed. Fry eggplants within 5 minutes, it is possible to add a little red balsam vinegar, then to lay out in a stewpan with a small amount of hot boiled water at the bottom. Close a cover.

Fry carrot on olive oil or in teriyaki sauce, too about 5 minutes, lay out over eggplants in a stewpan, close a cover.

Fry paprika within 5 minutes, lay out in a stewpan, close a cover.

After that to fry squash within 3 minutes (they more gentle therefore demand smaller time of heat treatment), to lay out in the same stewpan. If necessary to add a small amount of hot boiled water, to mix. Extinguish within about 20 minutes.

Fry onions on olive oil. At the end of roasting to add a curry and paprika. It will give to onions golden color. Lay the fried onions in a pialka.

Add to a stewpan the crushed garlic and the cut greens (basil, parsley and cilantro). Mix, extinguish 5 more minutes. Season black and paprika, to squeeze out juice of a lemon half, to salt. Leave for 20 minutes on a plate a baking plate a cover.

Lay out the fried onions in a stewpan, mix. Is it is possible in a hot and cold look.
