Warm spring days mean for many people that it is possible to go to the country, to get tasty and useful birch sap. In the country birches which don't suffer from gas contamination and chemicals in the soil grow therefore their juice is considered the cleanest and harmless. However it needs to be collected and used still correctly.

1. It is possible to begin decantation of birch sap with the middle of March – when on trees the first leaflets are dismissed. At the same time it is desirable to take periodically samples, checking, juice how actively flows. For its collecting it isn't necessary to choose young birches which juice has no saturation and original taste – and here more adult birch with trunk thickness from 20 centimeters will be ideal for this purpose. Having chosen a suitable tree, it is necessary to make on it a cross cut of 3-4 cm in depth and with a small inclination.
2. It is necessary to tie plastic capacity to the made cut and to make жгутик of a gauze which tip will be lowered in capacity – on it juice will flow down in its neck freely and quickly. After the end of decantation the opening made in a birch should be stopped up with a felt piece that the tree could tighten the wound. Collected birch sap needs to be used fresh as in the fridge it won't stay longer than two days. If it is required to be kept for a long time – best of all to give preference to freezing, however in such a way there is a lot of birch sap to keep it won't turn out.
3. Fresh birch sap is all-strengthening and tonic by means of which it is possible to overcome constant drowsiness, slackness and fatigue and also to increase immunity and to improve a metabolism.
