Red light-salted fish, and in particular a salmon - one of the most demanded snack on a New Year's table. The salty salmon prepared in house conditions is much more tasty than purchased analogs. It can be included in structure of various New Year's salads, sandwiches, a canape and tartlets.

Ingredients necessary for preparation of a light salted salmon:

- Is fresher than 300 grams or the defrozen salmon (at will it is possible to replace on a salmon);

- 3 чайн. spoons of a soy-bean sauce;

- juice from a lemon half;

- salt (usual or sea, to taste).

We prepare a fresh-salted salmon for New year:

1. For salting it is necessary to separate an integral piece of a salmon from a carcass or to buy already ready part of fish weighing about 300 grams.

2. For a salmon it is necessary to prepare a brine: mix lemon juice with a soy-bean sauce and to taste to add any salt. Prevent that salt was well dissolved.

3. Put a fish piece in a deep bowl or a plate and to fill in with the prepared brine. Leave approximately for 25 minutes, sometimes overturning a salmon.

4. Further it is necessary to take a dense package (for example, a package for freezing) and to put in it fish. There to pour out the brine which remained in a plate.

5. The package of fish and a brine needs to be twirled and fixed densely the ends of a bag by a clothespeg or zazhimama for paper. It is important to track that the brine didn't follow from a package.

6. The bag with fish needs to be put for 2-3 days in the fridge for salting.

Through the specified term the tasty salty salmon can be served on a New Year's table, or to use for preparation of festive dishes.
