Eggplants, tomatoes and mozzarella sandwiches in pesto sauce

The most tasty vegetarian sandwiches with the low content of carbohydrates in pesto sauce.

It is required to you

  • 3 eggplants
  • 250 g of mozzarella
  • 3 tomatoes
  • For pesto sauce:
  • 70 g of arugula
  • 20 g of pine nuts
  • 20 g of parmesan
  • 2 garlic gloves
  • Vegetable broth
  • Olive oil
  • Salt and pepper

Instruction

1. We wash eggplants, we cut off tails and we cut lengthways strips about 5-6 mm thick. We salt and put on a paper towel to remove excess moisture approximately for 10 minutes. Then we fry in a grill till golden-brown color. We slice mozzarella thin small. We wash tomatoes and we cut circles.

2. We cook sauce. We fry pine nuts and we cool them. We put arugula, pine nuts, garlic and a Parmesan cheese in the blender. We bring to a uniform state. We add a little vegetable broth and olive oil and spice and well we mix.

3. On a plate we spread slices of eggplants, then mozzarella, we water with pesto sauce and from above we put circles of tomatoes.
