Honey agarics are incredibly tasty mushrooms. From them it is possible to make a lot of various viands, including soups, second courses, pies and other. However that a culinary delicacy turned out tasty and useful, before cooking of a certain food it is better to boil mushrooms previously.

Not each hostess before frying or preparation of soup cooks honey agarics, and in vain, this procedure perfectly removes hazardous substances from mushrooms, removes bitterness. Therefore if your health is expensive to you and you don't want to spoil a dish bitterness presence, don't neglect cooking of honey agarics.

As for cooking time, the procedure can last from 20 to 40 minutes, here everything depends on the size of mushrooms. Many hostesses cook large and average/small honey agarics separately from each other as if to cook them together, then small mushrooms are digested, become soft whereas large aren't cooked longer. You shouldn't forget also about correctness of cooking: before the procedure the mushrooms need to be cleaned and to wash carefully then to put in a pan (preference should be given to enameled), to fill in with cold water and on strong fire to bring to the boil. Having boiled thoroughly honey agarics of 3-5 minutes, water it is necessary to drain and pour fresh cold water into a pan, to salt then again to put ware on strong fire. After boiling the second time fire should be reduced to a minimum and to cook mushrooms of 20-40 minutes (small - 20, average - 30, and large - 40). After time the honey agarics should be overturned on a colander and to allow water to flow down (it is better not to use broth, there is no advantage for an organism in it, and here of harm - it is full).

Mushrooms are ready, now they can be pickled, salted, frozen, and it is possible to cook from them soup or salad and not to be afraid that bitterness will spoil taste of a dish. It is possible to store honey agarics after cooking no more than two days, and it is strict in the fridge on the lower shelf, and before consumption it is obligatory to subject to thermal treatment: extinguish, fry, bake, etc.
