  • For chocolate apples pie on couple:
    • double boiler or two pans;
    • 6 eggs;
    • 200-220 g of a desi;
    • 200 g of bitter chocolate;
    • 250-300 g of sugar;
    • 200 g of wheat flour;
    • 200-300 g of apples;
    • 3 tablespoons of a refiner syrup.
    • For pie in a pan:
    • 8 eggs;
    • 2 glasses of sugar;
    • 2 glasses of flour.

Instruction

1. Chocolate pie with apples on a paruvymoyta, peel apples, remove a core, slice. Dismiss a desi piece in a frying pan, add a refiner syrup, wait until it is dissolved, and caramelize apple segments.

2. Grate chocolate or small cut a knife, put it in a small saucepan or the enameled bowl. Pour more water there, put on fire, bring to the boil and install in it a bowl with chocolate: let it melt on a water bath.

3. Take the cooled eggs, wash up, separate the yolks from the whites. 4. Soften a desi, knead a fork and add to yolks, shake up mix before receiving homogeneous mass. Pour in the kindled chocolate, mix. Sift flour through a sieve and, stirring that lumps weren't formed, pour into a chocolate paste.

5. Beat whites in strong foam, add them to chocolate dough, mix carefully, but carefully. Mix has to brighten, have equal light brown color without strips and spots and uniform consistence, reminding dense mousse or fat sour cream.

6. Lay a tray of the double boiler or a heat-resistant plastic container a foil so that it covered both a bottom, and sides. Put slices of apples, fill in with the chocolate test mousse, cover with a foil and place in the double boiler. Or finish pie until ready on a water bath.

7. Make a water bath: take two pans, one of them has to be less (in this case rather small saucepan on 1.5 l) and to enter freely another. 8. Prepare on a water bath or in the double boiler about forty minutes. Strew ready pie with icing sugar and cinnamon or other spicery to taste.

9. Take eggs, separate the yolks from the whites, beat whites with sugar in strong foam. Add to protein whips on one yolk and shake up the mixer. Then portions add flour and carefully mix.

10. Take a pan with a wide bottom (diameter of 32 cm), lay a bottom the parchment paper oiled from two parties (walls of a pan shouldn't be greased), warm up a pan a little.

11. Lay out dough, close a pan a cover, give up a towel on the place of a joint of a cover a pan, or cover with a towel, tie the ends to handles, from above put cargo.
