Pea soup – a national Russian dish without which the menu of the real hostess doesn't do. The recipe of pea soup rather simple, and can prepare it quickly in house conditions practically for everyone. For this purpose it is necessary to have only the necessary ingredients and a little free time.

It is required to you

  • - peas (200 g),
  • - potatoes (3 pieces),
  • - smoked sausage (200 g),
  • - onion (1 piece),
  • - carrots (1 piece),
  • - salt,
  • - sprinkling pepper,
  • - bay leaf,
  • - greens (to taste).

Instruction

1. In the classical recipe of pea soup it is necessary to use the dry peas which are previously soaked in water within at least 12 hours. But if the fast recipe of pea soup is necessary, it is possible instead of dry to use instant peas (such is on sale in big supermarkets of type of Auchan now). At the same time grains keep the useful properties, but time spent on cooking considerably is reduced. We put on a plate a pan with water, we bring it to the boil, we add bay leaf and we pour peas. We close a cover and we diminish fire to "average" and we cook within 15-20 minutes.

2. We clean potatoes, we cut small pieces, we add to a pan. We add a salt pinch to soup. We cook 10 more minutes. We add a salt pinch to soup.

3. Meanwhile we cook fried vegetables for pea soup. We clean onions, small we cut and we brown it in a frying pan together with carrots. We send the fried vegetables to a pan.

4. In the fast recipe of pea soup we use a smoked sausage. We cut it small pieces and we send to pea soup. We cook 10 more minutes and we remove from fire. The consistence of soup has to be homogeneous. To taste we add salt, pepper, before giving to a table soup can be decorated with greens. Separately we serve croutons which perfectly supplement taste of pea soup.
