Besides preparations for the winter and various salads cucumbers excellently are suitable for preparation of various refined dishes. One of such are the cucumbers stuffed with meat.

For preparation of the cucumbers stuffed with meat it is required:

On 8 fresh cucumbers: 1 glasses of broth, 1 glass of sour cream, 2 tablespoons of tomato paste, 1 tablespoon of flour, 30 g of a desi, greens of fennel or parsley.

For preparation of forcemeat: 400 g of meat, 2 bulbs, 4 tablespoons of milk, salt to taste.

Preparation of this dish includes several stages. At an initial stage prepare mincemeat. For this purpose the raw meat together with onions is turned in the meat grinder. Then add milk to it and carefully mix with salt addition. Any meat will be suitable for forcemeat, but it is better to use pork with beef alternately.

Further select large fresh cucumbers and clean them from a thin skin, cut off tips on both sides and scald the added some salt boiled water. After that delete an internal part together with seeds from cucumbers and carefully wash out them.

The next stage cucumbers fill with forcemeat. Stack in a pan for cooking and fill in with broth. There add sour cream, tomato paste and extinguish until ready. For filling use usual salty broth with addition of various spices.

After that a part of liquid is cast and do flour pan-frying. Then it is poured out back in a pan with the stuffed cucumbers and brought to the boil. The dish is ready, and it can be given on a table, having decorated with greens.
