Light salad from fresh cabbage with carrots and oranges

Vitamin cabbage oranges salad – fresh, light and juicy – it is possible to prepare at all seasons of the year. But it is especially good in the summer when gentle young cabbage of a fresh harvest is available for sale.

It is required to you

  • white cabbage – 500-700 grams,
  • carrots of the average size – 1 piece,
  • sweet oranges – 2 pieces,
  • wine or balsam vinegar – 1-2 tablespoons,
  • olive oil – 2 tablespoons,
  • cranberry – 2 tablespoons,
  • salt and sugar – to taste.

Instruction

1. Clean a head of cabbage from a topmost leaves, small chop, salt a little and you promnit hands to softness. Grate the peeled carrot, add to cabbage and mix.

2. Squeeze out juice of one orange. It is possible to use the juice extractor for a citrus, and it is possible to squeeze out juice and without extras. For this purpose wash up orange and properly you remember it in hands – until it doesn't become soft. After that make an incision a skin a knife and produce juice, gradually squeezing a peel.

3. Add vinegar and olive oil to orange juice then fill in with the turned-out gas station cabbage and carrot mix. Well mix, try. If on your taste it turned out too turned sour – add a little sugar and once again mix then remove in the fridge for one or one and a half hours.

4. After cabbage is kept waiting, peel the second orange. Divide into segments, take stones, clean segments from films. Cut each segment on three-four parts. Add the cut orange to cabbage.

5. Add the washed-out cranberry to salad. The cranberry if desired can be replaced with cowberry – in that case this sweet-sour salad will become slightly less sour, but cowberry will give the slightly bitter taste enriching taste.

6. Accurately mix. Now fresh cabbage carrots and oranges salad is ready and it can be given to a table.
