Mussels are popular seafood which sells separately or include in structure of seafood cocktails. The thin spiciness and pleasant, slightly elastic consistence does mussels irreplaceable at preparation of paste, pizza, various snack. It is possible to do tasty and nourishing salads with addition of greens, vegetables, fruit and unusual sauces of mollusks.

Salad from mussels with cucumbers

The soft fishy flavor perfectly is in harmony with fresh cucumbers. Such dish will approach as light meal, it is better to give it cooled, with a fresh baguette or slightly dried toasts. It is preferable to use home-made mayonnaise with the delicate and balanced flavor.

Ingredients:

  • 200 g of fresh-frozen mussels without sinks;
  • 1 large fresh cucumber;
  • 4 feathers of green onions;
  • 2 eggs;
  • 5 tablespoons of mayonnaise;
  • several branches of fennel;
  • leaves of a green salad;
  • salt;
  • ground black pepper;
  • lime half for ornament.

Eggs boil hard-boiled and cool in water. Blanch mussels in the added some salt boiled water several minutes, cast away on a colander and cool. Cut and lay out eggs in a bowl, to grate a cucumber and to wring out slightly hands. Crush fennel and green onions. Mix all components, add mayonnaise and ground black pepper, it is good to mix.  

Lay out in advance washed up and dried lettuce leaves on a dish. To atop place the mound of salad, at the edges to lay mussels. Decorate a dish with thin slices of a lime and fresh fennel.

Refined snack from marinated mussels

For salads it is possible to use not only fresh, but also marinated mussels. They differ in brighter taste and are perfectly combined with vegetables. 

Ingredients:

  • 200 g of marinated mussels;
  • 2 eggs;
  • 100 g of green olives without stones;
  • 2 tablespoons of mayonnaise;
  • 10 pieces of cherry tomatoes;
  • 1 small red bulb;
  • several branches of parsley.

Boil, cool, cut eggs in cubes and lay out in a bowl. Add a half of tomatoes, the crushed parsley, olives cut by ringlets and thin half rings of onions. Merge liquid from banks with mussels, lay out seafood to other ingredients. Add mayonnaise, mix. Salad can be served in tartlets, it looks very beautifully.

Salad with mussels and a paprika

Tasty food can be served as snack or a main course for a light dinner. Thanks to a multi-colored paprika it looks very effectively. The recipe very simple, tasty salad is prepared in only 10 minutes.

Ingredients:

  • 200 g of ready mussels in oil;
  • leaves of a green salad;
  • 1 small red bulb;
  • 1 yellow paprika;
  • 1 red paprika;
  • salt;
  • fresh lemon juice;
  • ground black pepper.

Merge oil from banks with mussels, lay out seafood in a bowl. Wash up and dry salad. Cut onions thin rings. To beat off bitterness, onions can be drenched with boiled water.

The paprika to scrape seeds, to destem. Cut pulp with strips, and then – accurate small squares. Crush parsley. Add a paprika, greens and onions to mussels, to add some salt slightly, to mix well. If salad is dryish, to add a little oil from under mussels.

Lay a dish lettuce leaves, to atop place mix of vegetables and mussels. Sprinkle lemon juice and strew with a fresh ground black pepper. Serve salad with the dried white loaf and well cooled wine.
