Summer chicken salad

Salad, light and useful to health, by a summer lunch or a dinner. Serve this salad warm or cold with the boiled new potato strewed with fennel or onions. Ideal option for those who want to lose weight.

It is required to you

  • - 400 g of chicken breast;
  • - 25 g of onions-rezantsa;
  • - 2 cucumbers;
  • - 25 g of fennel;
  • - salt and pepper – to taste;
  • - 4 tablespoons of olive oil;
  • - 2 tablespoons of balsam vinegar;
  • - 1 tablespoon of lemon juice.


1. Cut chicken on small pieces. Pour a tablespoon of oil or 1 teaspoon of vinegar in a wok or a big frying pan and put on strong fire. Put chicken pieces and fry 5 minutes, the golden crust won't appear yet.

2. Wash onions-rezanets, dry up a paper towel and straighten with scissors. Always add onions at the last moment of cooking to emphasize beauty of a dish and to keep a delicate taste of the resident of Ryazan. Pink-violet flowers can be eaten too – use them as additional ornament for salad.

3. Clean a cucumber and slice thin about 2 cm long. Mix a cucumber with onions in a big bowl.

4. To make gas station for salad, mix lemon juice and the remained vinegar. Season, then pour in the remained oil.

5. Add the made chicken to a cucumber and onions, strew with seasonings. Stir all salad. Wash up fennel, dry and small cut. Strew with it salad.
