Many sauces, one of such sauce - "Muslin" approach fish. Even the most ordinary fish dish with it will become much more tasty. The Muslin sauce for half an hour is cooked.
It is required to you
- For six portions:
- - 750 ml of fish broth;
- - 50 g of a desi;
- - 2 tablespoons of wheat flour;
- - 1 vitellus;
- - 1 egg white;
- - salt to taste.
Instruction
1. At first in a small bucket kindle a desi, add flour, slowly pour in fish broth, shaking up mix a nimbus. Remove a ladle from a plate, continue to shake up. Sauce has to become smooth.
2. Return a ladle on a plate, you cook 4 minutes, stirring slowly. Add salt to taste.
3. Now shift sauce in any fire-resistant ware, place in a big pan in which previously pour hot water. Sauce has to remain warm.
4. Properly beat egg white, add a yolk, continuing to shake up. Pour out egg foam in sauce. Serve the Muslin sauce to fish at once in slightly warmed up sauce-boat.
