The real rye bread has rather firm, heavy texture. It is no wonder that preference is in most cases given to a wheat bread. However there are original recipes of the most tasty black bread which is easy to preparing by means of the home bread machine.
Black raisin bread
To make black bread in the bread machine, the following ingredients will be required: 300 ml of water, 2 tablespoons of vegetable oil, 2 tsps of a yeast baking powder, 2 tablespoons of natural honey, 200 g of wheat flour, 300 g of rye flour of a rough grinding, 1 tsp of salt, 1/3 glasses of raisin.
Preparation of black bread in the bread machine is carried out in the Main mode. In the presence of the special mode for pastries it is more preferable to choose an average rumyanost of a crust from whole-wheat flour.
In a bowl for pastries put vegetable oil, pour warm boiled water and add yeast. Water temperature shouldn't exceed 40 wasps. Otherwise yeast will die, and dough won't rise. Then add natural honey and the sifted wheat flour to water. After that put rye flour of a coarse grinding which doesn't need to be sifted. The bread machine is turned on and several minutes later after the beginning of a batch of the test add salt. It is undesirable to put salt along with other components as it slows down fermentation of yeast that influences dough lifting. Put previously soaked raisin still later. Dough can look at first rather mobile. However if by the end of a batch it forms the sphere which departed from walls, everything is all right, it gained the necessary consistence. To a mobile dough it is necessary to add a little flour, to too hard - waters. During pastries it isn't necessary to open the bread machine in order to avoid violation of the thermal mode. Finished bread needs to be taken out from the device at once and to leave on a table to be dried as products from rye flour quickly dampen.
Black bread in the bread machine with addition of cocoa and coffee
Preparation will require the following ingredients: 2.5 glasses of wheat flour, glass of rye flour, 2 tsps of a yeast baking powder, 2 tablespoons of apple cider vinegar, 1.25 glasses of water, 1.5 tablespoons of cream powder, 1 tsp of salt, 1 tablespoon of natural honey, 1 tsp of instant coffee, 1 tsp of powder of cocoa, 2 tablespoons of vegetable oil. In a bowl put the sifted rye and wheat flour, salt, cream, honey, cocoa, coffee. Then in ingredients do deepening in which put a yeast powder and pour vegetable oil, warm water and apple cider vinegar. Bake bread in the Main mode with an average rumyanost of a crust. Finished black bread is got from the bread machine and allowed it to cool down. Natural honey in the recipe can be replaced with treacle or usual sugar.
